It takes a while for the oil to really build up to a nice finish. A third option would be to lay down a coat of oil (polymerized linseed oil , tung oil , or walnut oil ) let it dry then seal it with a coat or two of blonde shellac and apply 2-3 coats of satin or matte polyurethane. 3-5 coats for high use items like a coffee table.
